THE IDEA for Fabrika Daga was born spontaneously in the spring of 2014, when a girl met two boys. Maria had a dream. She wanted to have her own social place, where different and interesting people could gather over a cup of specialty coffee, a place with an industrial design and unique attention to every detail. The boys were long time friends and they had a dream of their own. A kitchen, where they could develop their potential and offer the urban people what they believed would answer their needs, namely fast but fresh street food, prepared on the go with quality products. On November 23, 2017, the second location opened its doors at 13 B Sheinovo Str, a logical step after the first at 10 Veslets Str.

THE PLACE that took the name Fabrika Daga can hardly be put into a definitive frame. We find it difficult to describe it ourselves. We created it with lots of love and a special touch, with the idea of it being a social meeting place, maybe a small Coffee Shop, but gradually it became a place for brunch, a pastry shop and even a restaurant where at lunch two complete strangers would share a narrow table, and the next day you would see them together again, but now as friends. Perhaps, if the place were a person, it would be a girl – a rebel with a tough heart, full of love, thirsty for adventure and with many friends.

The MENU in the beginning consisted of a few carefully selected sandwiches and salads, but our intuition and careful observation of the wishes of our guests led us to expand the menu and this is how we invented the weekday lunch specials – soups, vegetarian and meat dishes. At San Stefano Str, we also included dinner suggestions, with different dishes every week.

BRUNCH, which has gradually become a daily routine, transforms the weekends into a noisy, fun and truly invigorating experience. Brunch is the favorite highlight of the week for our team, when diverse, colorful and interesting people are queuing up to get their mekitsas, french toast, strudels or honey and butter toasts. Always familiar and simple flavors that bring us back to our childhood and create an additional sense of harmony and coziness.

COFFEE is something we are proud of presenting. Having Specialty Coffee is what makes us different.

At Fabrika Daga, you will try different coffee drinks from special coffee beans grown in a special microclimate, which are delivered to us thanks to Yordan Dabov, a long-time member of the international jury of the Cup of Excellence and owner of Dabov Specialty Coffee bakery. All beans are high quality, light and freshly roasted with great care, that have arrived from small and sustainable farms around the world, grown in ideal climate conditions. The unique flavors and aromas are the result of the special characteristics and components in the soils and the daily care of their farmers, of course.
Coffee culture is so important to us that we put great effort in introducing the urban folk to the different ways of preparing coffee and now hemex, french press, calita, aeropress, vacuum jug and v60 are not unfamiliar flavors to our guests. Espresso and cappuccino are the classics that we cannot do without, and that is why we worked hard to acquire two excellent coffee machines, which are of invaluable assistance to our baristas – La Marzocco, Linea and Kees van der Westen, Mirage.

The TEAM is perhaps the most important part of our collaboration. Fabrika Daga is lucky to gather in one place great people who vibrate at the same frequency in complete harmony with each other. We take care of you with love, and to us, the word Love is synonymous with Special Attention. Our work is our mission to make people happy, be it by simply adding a fresh flower to a cup of warm milk and coffee.
